Characteristics: The Greek variety Assyrtiko is extensively grown in arid, volcanic ash-rich soils of Santorini and other Aegean islands.
Taste: Often compared to Sauvignon Blanc due to its citrus flavors, especially lemon, and high acidity. It can age for 4-5 years.
Pairs with: It complements seafood, soft cheeses, and light dishes perfectly.
